Need help with the Universal Arcade Joystick Adapter Plate.

I have a MVS-4-25 cab and I want to put Sanwa joysticks with a bat top in it. Im not exactly sure what plate I need and the skill level in replacing it. Its going to be my 1st try at replacing parts on my cab and I'm trying to get the sticks as close to a Mad Catz TE but with a bat top. Can anyone give me an idea of what I would need to purchase?
